Blackberry Jam too Sticky!

Hi!  This is my first post on this part of the site!  I am normally on the chicken bit!  But here goes!
We attempted to make Blackberry Jam yesterday and everything seemed find until we came to put in on our toast this mornng :wacko:  It has turned out really sticky and difficult to spread.  I used a thermometer and boiled it until it reached 105 deg.  I used the same weight in fruit as jam sugar and lemon juice.  What else could I have done?  Should I have added water at some stage.

I generally do 1kg fruit, 1kg sugar, juice of 1 large or 2 med lemons, then add about 1 - 2 pints water.

But I think everyone does it different.  I also do not use a thermometer but the cold saucer test.

Try this recipe?

sounds like you`ve made proper jam instead of the thin supermarket stuff.
If it tastes good why worry about it . :D

This is my view as a dedicated jam eater, W.I gold medal winners will probably disagree  :D

it happens to me all the time!!
you want to get it to 103 or 104 - then stir it around then check the temp again - no more than that or it'll go hard, as you've noticed!

i'm constantly eating slices of jam on toast instead of spreading it!!
(in fact, my firrst attempt at cherry was so hard that i couldn't get it out of the jar - had to microwave it!!)

I'd say too much pectin and boiled for a bit too long, I use half the amount of sugar than normaly suggested, you can really taste the fruit, if you are making t to keep for ages then use the recipe amount but if you are going to eat it then try half the amount, I make loganberry jam and its fantastic.

This happened to me last year, with a batch that I strained to get the seeds out, decided I prefer it with the seeds in!
