Hi Guys

I am wanting to do my first ever pickling!! I have a few questions....

I have pickling vinegar, what can i pickle with this as i am aware its a stronger vinegar.

I want to pickle beetroot, can i pickle them with pickling vinegar?

If i am to pickle onions or shallots, do i need to draw the water out of them first? Can i do this with just salt?

Drawing some of the moisture out with salt is a good idea....rinse them off afterwards and dry them thoroughly. Pickling vinegar is ideal. I always heat mine first (not everyone does) and then pour the vinegar onto the onions that have been packed in sterilised warm jars and add the vinegar.....put the lids on the jars and bob's your wotsit!!!!

Yes, i agree completely with Aggie.
Heating the vinegar will get more flavour going.
I always salt onions, red cabbage, etc.  I think it improves the "crunch"
