Title: stuffed chillis

I have just picked loads of chillis, and they have got quite big.  I already have loads in the freezer now.  What I was wondering was...........do you think I could stuff them with mozzarella and freeze them?  I am thinking of some stuffed chillis I had once, that were in a batter.  If I cooked them, with batter, and froze them...do you think it would work?

IMO, frozen mozzarella isn't good.  Here's an idea for you:

Peperoncino Ripieni (Stuffed Chilies)

Works best with ball-shaped chilies. Scoop out the seeds and discard (or use for next years crop), and place remaining shell in vinegar for upto 8 hours..  Meanwhile, mix tuna and capers into a paste.  Spoon the paste into the chilies and put in a clean jar.  When jar is full cover with olive oil.  Leave in the dark for 2 weeks.  They're then ready to eat, but mellow with time.  I try to leave them alone for a month.

mmmm, that sounds interesting, thanks  :D , will give it a whirl.    

   I guess feta would be ok in oil too wouldn't it?

Anyone know if cream cheese would freeze??
I honestly have a real glut of chilies right now.

Cream cheese will be gritty after defrosting.

Feta in oil is good

Might be stating the obvious - I take it you've dried as many as you can reasonably expect to use?

yep, dried loads.  I have 3 green chilli and one red chilli plant, and they have all produced absolutely loads.  Bit wet over here last week and I negleted the plot a bit...went down yesterday, and I got half a bucket load of huge chilies, so, I thought they would be good stuffed with something.  We have got friends coming to stay next month, so I would like to be able to pre-make some apero nibbles.
I am about to make some chilli jam now......gutted though, I have had to buy in all my tomatoes :cry:

On a related topic, two questions:

1. I have two chilli plants in the greenhouse which are thriving - however the chillis are staying green rather than turning red. I assume this is down to lack of sun? The chillis are nice and horn-shaped and about the length of my index finger. Should I harvest them green, or wait for them to turn red and hope they're not the size of my forearm by the time they do?

2. Is there somewhere on here that details the best way of drying chillis?

I tried drying some chillies, by threading them onto string and hanging them up in the driest part of the utility room, but by the time they were dry enough, they didn't look very nice, so I chucked them.  However, from last year I still have frozen chillies, some whole some chopped, and pickled chillies in big jars, and some in olive oil.  Boy, is that oil strong!!!!! lol

I do.  Seems to work well!
