I have some nice chillis growing now and I really love them pickled from the supermarket/kebab van. Is there any way of doing this at home?
If not, any other ideas what to do with them to preserve them? I am going to make some Chilli jam from the recipe in Val's book but would like something else too.

When you make the chilli jam don`t forget the extractor fan. I once made a big batch of sweet chilli sauce and CS gassed the house . The family had to go out in the garden while i opened all the doors and windows.

:lol: I will remember to keep the back door open then! I'm making some jam's/pickles that you can't buy in the supermarket for Christmas presents so I though Chilli jam would be ideal for that.

The smell of boiling vinegar seems to attract wasps from miles around. I had to close all doors and windows and have the extractor on in order to stay wasp free. :(

I pickle Jalapenos. I boil vinegar with some thyme in it and then add chillis. I dont keep it boiling for long maybe 5 minutes. Just softens the chilli. Bottle and eat as soon as you like. If it is kept closed it does seem to last for a few months.

I've never thought of pickling chillis, I always dry them or freeze them -- will have to give it a go. Thanks, Big Paddy :D

Thanks for the advice, I will try pickling them either when the wasps are gone or with closed windows and extractor fan on!
I might even pop to the garden centre in a week or two as I picked up a chilli plant there last year pretty cheaply at that time.
