i just use normal recipe outof book but use really old bannanas and i double the amount cause i find it toooo dry otherwise. damn good! nice and sticky mmmmm 8) ::)

I'd be interested in a breadmaker banana bread recipe!  I love banana bread/loaf cake but whenever I make it it turns out like a brick - I know it's supposed to be reasonably dense, but I get past 'a bit dense' into 'might as well be plutonium'!

Over the week-end I'll find the recipe and post it here - pleased to if it is of use.  :)

I also put a recipie for banana bread on the competitions page.  Differant ingredients form Ice's recipie but mine is a very moist cake/bread.  Easy to do all in one bowl and mix.  Bake and scoff! :D  Yummy

Help!  I'm being hassled by the Germans!  I will try your recipe soon and try a taste test.  Yours has more ingredients in than mine.  People at work keep bringing me all thier old bananas to make some for them.  But they don't bring the flour,eggs and marg too. Cheeky beggers!

Simple solution = make it without all the other ingredients and hand it back  :tongue2: they will soon get the message!  8)

The recipe I have for banana bread is the Nigella one which is very good. It has sultanas soaked in rum in it. Yummy.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Just like to say thanks to Ice for her banana bread recipe which we all enjoyed. Quite right about the freezer though - it didn't last that long!
Haven't tried mrs ploppy's yet though - someone ate all the bananas!

Here it is if anyone is interested:

Banana and Nut Bread

Ingredients – Group 1
Butter (melted)      2 tbsp
Milk         1 tbsp
Mashed banana       1 cup
Egg         1
Walnuts (chopped)      ½ cup
Lemon rind      1 tsp

Ingredients – Group 2
Plain flour         1½ cup
Bicarbonate soda      ½ tsp
Baking powder      ¼ tsp
Sugar         ½ cup
Salt         ¼ tsp

Method:
Mix group 1 together in a separate bowl.
Mix group 2 together in a second bowl.
Pour mixture into breadpan

Using setting 4 (Cake) in Morphy Richards bread machine

Cake cycle =
7 minutes knead
5 minutes rise
8 minutes knead
80 minutes bake (max 121 degrees C)

I found about 2 and a half bananas once mashed [but depends on size of your bananas] = one cup.
(I eat the bit left over!)  ;)

Sorry - forgot to say that all measurements are "American".... cup-size and spoons!
