Thyme

As my thyme went very woody this winter I sowed some seeds and they've been in the zip-up thingy for 4/5 weeks.
With the sunshine heating it up they've popped up but do I need to keep them covered when I pot on? Shall I continue in the "zippy" which I've actually opened up now so the brassicas, lettuce and leeks get hardened off?

I would harden them off and get them outside as soon as they are potted on.

If you plant them fairly deep, they usually grow additional roots from the underground stems as well, and make bushier plants

My Thyme plant self seeds all over the place - I then use these for new plants as the old ones get woody. Have you looked for self seeded ones  - (you are probably a lot better at weeding than me and don't have any ? )

My current 2 plants are in a trough on a shelf so if they did seed it would be below where the chickens have access and scratch everything up!

Last year I bought one of the 'living' herb pots in the supermarket and diligently separated each individual plants and potted thm up individually.....patience of a broody saint me....and ended up with about 50 plants! They all took and I've had tons of thyme all through the winter and they are still going strong....if a bit woody :)
