Title: salsify

It is the 1st time that I have grown salsify and am not sure what I am doing with it. I had a peep at one this morning, it has a white root about 1/2 inch wide and maybe about 5-6 inches long, I tucked it back into the soil. The picture on the packet shows a black root. When do I harvest them?
ps I have never cooked them either, 1st time for everything. CC

I'm growing them for the first time too. You can harvest Oct - March, but they are meant to be better after a frost.

Salsify has white roots, the ones with black roots are scorzonera, but they are both treated in the same way.  You can lift them any time during the winter.

I par boil them with the skin and side roots still on, then peel them and finish them by browning in butter.
