I made my first ever chutney on Tuesday - Beetroot and Ginger, a recipe from a WI cookbook I got from lakeland. I have no idea what it tastes like as I have to leave it for 6 to 8 weeks now. I roasted the beetroot in the end because I had a cottage pie in the oven and it was just easier as the kids needed my attention. I was amazed how much the vinegar fumes hurt your eyes when cooking the chutney though! Blimey!

I got some baby beets in the veggie box this week so they are going to be turned into plain pickled baby beets. My MIL has advised me to put some sugar in the vinegar to make it sweeter.

My mum used to put a cube of Strawberry or Raspberry jelly in the vinegar whilst bringing to the boil. It made the pickles just that bit sweeter. :D
