Vin de Noix

We were given free range on a walnut tree yesterday, we returned home with around 50 of them.

Now when we lived in France they do a green walnut wine called Vin de Noix,

so I thought to myself it would go against every fibre of my wine making body

not to have a go.
So with the help of uncle Google I came up with this recipe... Here

Ooh, that looks interesting. Our neighbours have a huge walnut tree so I might ask if I could have a feww and give it a go.

The nuts need to be on the soft side, the tree we can get ours off are now past their best for this drink, as when you cut them in half the shell is starting to form. You will see it as a thin dark layer inside.

Yes, these were a bit past it as many of them were pretty hard!

Decided what the heck and bunged them in anyway and will see what happens. Will be a bit more organised next year.

As far as I can find out, the French collect in June...so we'll will be on the ball next year.
