Next Sunday I am cooking dinner for 13!!

I am cooking a nice easy chicken tagine but my 2 nieces are vegetarian and most of the others will eat anything!
So please does anyone have a favourite recipe for vegetable tagine or something in a similar style that will go with couscous.

I use the same spices as for my meat tagine.  First fry an onion gently, add the spices and cook for two minutes.  Then add veg that you know they like, stock and some tinned toms to cover.  When cooked add chick peas and if you feel like it some almonds and soft apricots.  

To make my couscous special I throw in loads of mint and parsley with olive oil and lemon juice.  Then I add fresh pomegranate seeds and some chopped yellow pepper, cucumber and cherry toms.

Serve with thick set greek yoghurt sprinkled with paprika.

Ice that sounds really good - especially the pomegranate seeds in the couscous which I have not heard of before.
I may even have to practice this for myself first!!

Always good to practice a dish before you serve it.

If you want to get the pomegranate seeds out easily cut it in half, hold over a bowl and bash the back of it with a rolling pin.  It can get messy, but works a treat.  It's really healthy, a great colour and not too sweet.
