Creamy Chicken Curry

Serves 4
prep 10 mins
cooking 20 - 30 mins

1 spray low fat cooking spray    (or oil, i am trying too be good  )
4 med chook breast, uncooked skinless,  boneless & flattened
450g broccoli
1 can cream chicken soup (5 fl oz)
100ml sour cream
40g raisins
1 tsp curry powder
25g cheddar cheese grated

(optional extras are shrooms and onions)  mmmmmmmm

1)
spray none stick frying pan  with cooking spray (oil) , fry chicken over a medium- high heat for 5 mins each side.  Remove from pan and cut into cubes.

2)
Meanwhile, place broccoli & 1-2 tbsp water in i micro bowl, cover and micro on high just until broc is vibrant green, approx 3 mins, drain and place broc in pan or wok over med - low heat.

3)
in a large bowl mix together soup, sour cream, raisins and curry powder.  fold in chicken cubes, then add mix to broc in pan (wok)cook for 3 mins, stirring occasionally, but don't let mix boil.

4)
scatter grated cheese on top cover, remove from heat and let stand for 5 mins then serve with the rice of your choice .

blinkin eck    someone better try this and report back,  me fingers are sore from typing.

My missus makes this but misses out the cheese for some strange reason, it is very nice indeed.

cheers

I've always been very shy, but working with engineers, I had to be more outgoing than them or they make your life a misery, but since giving up working in London (too far a commute from here!) I seem to have lost a lot of confidence in myself (doesn't help when no one wants to give you a job!)

So that's one reason I like being on the PC.  I can sit and type and actually say what is in my mind without worrying what someone is thinking of me.  Face to Face, i always seem to make stupid remarks that don't mean anything (mind you, I can still do that when I'm online too!!!!!)
lol
