White bits in my compost

Hi All,
I'm a keen hot composter, and I've made a rolling compost bin. I use mainly coffee grounds, grass cuttings, and a hefty splash of urine. It usually takes about 2 days to start steaming, and by about 4 days it's really cooking - literally.
I found a whole potato, about 3" in diameter in the barrel the other day and it was actually cooked. I didn't taste it of course, but it cut just like a boiled spud.
Anyway, I digress.

When I turned over the mix I noticed loads of white specks, particularly in clumps of grass cuttings that hadn't been broken up. I would think that it's too hot in there for it to be fungus, but definitely not hot enough to be ash (which it actually looked like).

My guess is that it's small colonies of thermophilic bacteria, but I don't really know. This lot has much more grass than previous batches, and there seem to be lots more of these white bits than previously.

Anyone know what they are?
