We love salt beef and i usually do a piece for the week between  Christmas and new year. Its gorgeous in sandwiches and with pickles and crusty bread. :)

The saltpetre these days just isn't the same as it use to be, so while looking on the web for a recipe not using saltpetre i found this video.  Its more or less just how i do it and the saltpetre is only for the colour. It use to make the meat a lovely reddy pink colour, without it it's a bit grey.

 Most recipes have the brisket rolled but we've always made it with a flat piece of meat, just like it shows here.
Watch the little film and if you've never made it think about giving it a go. Use a nice big lump of real good value brisket or silverside, but brisket is cheaper and i think  better. :happy:
