its off the bbc web site key in pumpkin chutney in the ingredient search and its listed under this little farmer went to market. Sorrry havent worked out the photo thing yet.

I did a pumpkin chutney too. its just maturing for a few weeks before we jump in  :lol:

i have been collecting them around the village and feeding my 11 pigs so nothing is wasted here and the pigs love them.

I turned a roasted Uckiki Kuri into soup yesterday with the addition of a tin of creamed sweetcorn. I roasted the chunks of unpeeled pumpkin in a tray and I studded the pieces with red chilli and garlic and sprayed with olive oil. Roast for about 40 minutes at 220

Once cooled it got peeled and then blitzed. Oh I added a bit of freshly grated nutmeg to it along with the seasoning.  I had some for my lunch today and it's thick and moreish  :)

Chickens do love pumpkins don't they Haychee!

In the end I did the following:

1. cut out the seeds and gave them to the chickens
2. took out the majority of the flesh and made pumpkin soup with it
3. carved what was left and put them outside on halloween evening with candles in
4. took them back in and gave them to the chickens to eat the next day!  They ate all but the hardest part of skins

Don't think you could get much more use out of a pumpkin if you tried!

Pumpkin is one of those veg that has quite a bland flavour on its own, isn't it, so it 'carries' other flavours well:  I also like it roast, with baby onions or onion quarters either with or without herbs and a little garlic.  It's also great for vegetable curry and for soup (or even curried pumpkin soup!), and there's also a recipe for chutney in which pumpkin and butternut squash are interchangeable in Catherine Atkinson's 'Pickles, Relishes and Chutneys' - it's called Butternut, Apricot and Almond Chutney, and I'll be making some later as it looks really pretty and I like the idea of the flaked almonds for a bit of crunch  :)
