Just dug out my mum's old stack of recipes.  Rolled, boned breast of lamb cooked on a bed of onions.  She used to mix chopped mint in with the mash. Definitely talking to butcher next week.

Baked onions in white sauce was my mum's fave!

Might get Mrs Growster to agree on pain of no tinctures until she says yes...

Mum made rissoles from left over Sunday lunch meat, she added cooked potaoes and onion, I think they were covered in flour and then fried, but not sure, I do remember threatening my elder brother with a garden fork as he had stolen mine but thankfully I calmed down as I grew older.
