Just wanted to share with you what we found when we dug our first ever parsnip today. I know it's nowhere near DD's favourite but it is 43cm long and weighs 900g. We are very proud!

Nice one Rainbow. Now how are you going to cook it? Best roasted I think and served with a nice rib of beef :)

I hope mine look as good. I only grew 8 due to space and they are going to be dug up on Christmas Eve :D

That looks great. Quick question - how did you get it out of the ground?! I have some that I have grown for the first time and the tops of one of them looks quite big, gave it a little tug but it was going nowhere fast! I want some for Christmas so happy to wait, but just wondered the best way to dig them up?

Mine are fairly well spaced in a raised bed. grew them in alternate rows with carrots. The carrots are now gone so I just tucked my border fork down the side of it to loosen the area and out it pulled. We have very light soil so I guess that helped but it defo wouldn't have come out without the help of the fork.

With a bit of luck I will have my first Parsnip this time next year...
....wonder if it will be as good as yours.... :)

Beware frost/snow, last year my ground was like concrete on Christmas eve, ended up running round shops for 2hrs to buy tasteless leeks and parsnips,lol

Reminds me of when I first grew a parsnip. Couldn't believe the size of the thing lol They are really yummy too. :) Well done Rainbow!
