Hi

I have loads of strawberries at the moment, but I am off on holiday at the weekend. I know, bad timing!
Would it be OK to freeze the strawberries till I get home, and then make jam with them?
If so, do I need to make any changes to the recipe to take account of the fact that they have been frozen?
Sorry, not yet a jam expert, but  I made a little last year and would like to do so again.

You should be fine freezing them - we do it a lot. Allow 10% more fruit to sugar when you make the jam to make up for the loss of pectin caused by freezing.

I do the same and freeze stuff until a jam urge moves me, but instead of increasing sugar I just add some commercial pectin - does it for me and I feel thinner!

We do that to but more because we don't have the room to store loads of jam jars.  We freeze the fruit and then in the dead of winter when it is horrible and cold outside, you make the jam and the kitchen smells of summer fruits.  Yummy!
