Strange egg laying patterns

OK, lets see if you can sort this one out...

Rosemary, my Cobb-type hen is just under a year old.  She has never laid consistently or regularly, but she does produce wonderful large tinted eggs which have a tendancy to have fragile shells.

Recently (within the past 2-3 weeks), she has started to lay 2 eggs a day, sometimes one soft/no shell egg and one very large egg (circa 100-125g), sometimes 2 "normal" sized eggs.  When she does this there will then be a period of 3-4 days when she doesn't lay at all.

Now, obviously as a Cobb-type she wasn't exactly built to make eggs - but I didn't realise she was a table breed when I bought her as a chick - so I'm assuming the fragile shells may have something to do with this, but the 2 eggs a day... it's very strange!

All my girls have ad lib layers pellets, a handful of mixed grain in the evening and free range in my garden (I have no grass to prove this! ;) )  They have an oystershell/grit mix available at all times.  They are mite and louse free, and all poos are looking normal.
