If the potato plants start turning yellow is it a virus and can you still eat the potato's?

What variety? When were they planted?  Did you feed them?

It could be any number of things, it might just be that they are ready and the foliage isn't needed any more.

Have a look at the base of the stem to check that black leg rot isn't setting in.
