After having found out to my horror that adding wood shavings or sawdust to your soil depletes it of Nitrogen, will putting bark chippings around my fruit bushes have the same effect ? :?

Any thoughts would be most helpful.

Probably but to a much lesser degree,  they will decompose a lot slower than fine stuff, you could always mulch underneath first with a light dressing of compost from your heap or a thinnish layer of grass cuttings etc.
He who asks is a fool for five minutes, but he who does not ask remains a fool forever.

I mulch my fruit trees with manure then top with bark mulch so it looks neater. The bark chips are coarser and slower to breakdown. The manure supplies any nitrogen it needs along the way while still feeding the plants.
