I've tried growing herbs on my window sill in the kitchen
But after a couple of weeks they start bolting, long strings, but next to no leaves
The mint just died off in the winter, but it was in a warm kitchen, wasnt over watered or over fed
I dont cut them down to the roots, leave plentuy on there, so they can regrow
Seems to be they same with all of them
So what am I doing wrong ?

I water my herbs from the bottom that are on the kitchen windowsill so they dont rot. Don't know if that helps

That's what I do, 1/2 inch of water in a little tray

They get plenty of daylight (maybe not so much sunlight)

Never had the bushy plants you see on websites

Any plant grown indoors which gets leggy is almost certainly not getting enough sunlight. If you can't move your herbs somewhere brighter you could try the aluminium foil trick to reflect light back from the window onto the plants.

Most herbs, especially annuals, will try to set seed - I've managed to keep a basil plant producing all through this winter by feeding regularly and pinching out any flower stalks that appear (poor thing looks a straggly mess now but it's still alive!)

Also, most herbs won't be at all happy in wet conditions - I only water mine when I notice they're starting to wilt!
