i want to turn the paddock into a meadow with wildflowers, i know that foxgloves are poisonous so should i avoid them at all costs or will my horse hopefully avoid them?

I would avoid them.  It is not worth the risk.

I don't know whether your horse will eat them, but he will certainly stand on them, and as they are fleshy leaved plants it will  not do them any good!

Foxgloves usually grow in heavy shade.

I don't think it's worth the risk myself, especially when the grass is well grazed in dry periods. I used to pull it when I did the ragwort, just to be on the safe side.
