Post by: LILLILEAF on October 14, 2016, 05:47
Does anyone have a recipe for Almond butter?,or is it just a matter of blitzing them to a paste.
Some of these nut butters have oil,i would rather not add oil unless i really have to

Well it was Tudor Week on Bake Off on Wednesday and they were making marzipan centrepieces, so with my newly acquired knowledge on the subject, I can say no it isn't.

Modern marzipan has egg added but the original marchpane was almonds and sugar and was baked like a biscuit.  Either seemed to be a total nightmare to construct centrepieces out of

I bought a  jar of almond butter in a delicatesan to try and it was soon binned as we didn't like the taste at all!

That's a shame - you could have salvaged it by mixing with water, straining, and using the 'milk' for something like blancmange, or even to add flavour to an oatmeal porridge instead of cooking it with water (proper Scots!) or with milk.

SS (who developed a taste for oatmeal/water/salt porridge whilst in Glasgow, but who didn't turn native enough to 'go commando'!)

Yes it sounds like marzipan, but there is no sugar,my understanding is almonds have a high protein content, and they are very good for your health, this time of year i am very busy at work so i was looking for another way to enjoy almonds to give me the extra energy i need.
Its my day off today i will have ago and get back and tell you how it went.

Just blitz almonds until they make a paste, no need to add anything. You can roast them for 10-15 mins first. To make almond milk blend almonds with water( you would have to check ratios) strain through nut milk bag or muslin. Will keep for a few days in fridge.
