Whats the best thing to do with to do with old Brassica stalks / stems / roots? Are they too woody for the compost bin? Should I just burn them?  :?

Yup, back of an axe against a piece of wood works great for me.

keep the biggest and dry it inside the shed door for keeping women of ya lettuce

... and if they aren't quite composting down at the same rate as the rest I just shift them to a newer pile ... they do take a while, but I had to waste anything!

I've got a nice hefty hammer that I give them a good bash with (same with sunflower stalks which can also be a bit tuff) - best to wear protective eye-wear for all the bits that fly up, then all the bits go in the compost bin.
