I have found a nice recipe for raspberry muffins but it says to use buttermilk.  Do I have to use it or can I use ordinary milk?

Use ordinary milk soured with some lemon juice.
Cheese makes everything better.

If you want to make buttermilk yourself it's dead easy, plus you can eat the butter afterwards!!
Get some fresh double cream and with an electric mixer whisk it and whisk it and hey presto you have butter!!! The liquid that it leaves behind is buttermilk. You wash the butter in cold running water until the globules of buttermilk are no more and if you like add a bit of salt, pat it up and there you go!! :)

The milk and lemon juice route is a lot easier and cheaper for me. The 'tang' of soured/butter milk gives the item more flavour than regular milk.

I made the muffins this afternoon. I just used ordinary milk.  They were lovely.
It was the first time I had made muffins, so I was pleased that they came out ok.

Adding a drop of vinegar, if you don't have lemon, to milk will also sour it to give the buttermilk taste  :)

LOL Aggy, you don't need an electric mixer, I was at my daughter's once, and she said will you whisk the cream for me Mum, but we were chatting too and I'm afraid my whisking went a bit too far!!!!!   :lol:
