Growing veg' in an 'open'greenhouse.

The raised beds in my greenhouse consist of extremely old horse muck, so old that any similarity with the normal heap has gone it is now very friable, very light soil.  The greenhouse is without the roof and the windward side so now open to the elements.

I have been growing toms in there for years and removed the glass so the overwintering frosts could do the work on any bugs and beasties. I was going to replace the glass, but have now decided to give the soil an annual rainfall overhaul.  What general veg' will do well in this situation?

So what veg - light rich soil in full sun from dawn 'til dusk.
