Audience Head-count

On Sunday, after Strictly Come Dancing, it was said that it had the biggest amount of viewers since it started.
Often similar quotes are made ie; how many people listen to Zoe Ball and how many viewed various soaps etc.
I would like to know how are these figures obtained. Is there a person with a little "clicker" counting

As far as I know they survey small sample of people and then extrapolate the percentages to the full population.

Part of it is as P!P says, from 5,300 homes on the BARB panel (people - based)
part is from sample devices that tells BARB what is actually being watched (device -based)
BARB = Broadcasters' Audience Research Board
