Chilli lottery

I do love the joy of growing and cooking with your own produce but do find that with things like chillies it can be a bit hit and miss with the heat.

Have a favourite recipe for a spicy chutney / sauce that is great to cook lamb in or put on pasta and Nick loves which is fab as he can be a bit of a fussy eater! Made it again today and had a mix of chillies, mainly choc hab so was a bit worried! It has turned out really nice. Just has a really rich, mellow heat that doesn't hit you in the face but has a significant after burn! A relief as I have had meals that I can't taste the chilli in at all and those that were inedible as too hot.

So why other successes or disaters have people had with unpredictable chillies?
