It's taken two years but I've finally cracked it.

A Jerusalem artichoke  soup recipe I would make again.


Artichokes, garlic, ginger, sizzled in a little olive oil, add chillies, kaffir lime leaves, ground coriander,  lime juice and hot chicken stock. Simmer 20 minutes blend, season, serve.


I know it's nearly the end of the season but any one else got any recipes for this prolific veg.

Hugh Fearnleigh Whatsit  does a 5 root veg soup and one of the veg is artichokes, my friend liked it but I could still taste the artichoke and I don't like it ::)

I actually do like the taste, it's just so strong there is a limit to how many you can eat. Unlike potato which complements many other flavours   artichokes over whelm almost every thing.

However they seem to suit Thai spices, I'm thinking of having another go this week and adding coconut too.

I tried to sneak 2 in to a veggie soup & the kids refused point blank to eat it!
