Carrot and Coriander Soup

Thought I would share my favourite soup recipe, make it hotter or cooler by adjusting the chilli power to suit your taste.

Carrot and Coriander Soup

Low fat cooking spray   
150g dried red lentils
I onion diced   
2 pints hot veg stock two cubes (or less if you want the soup thicker)
500g diced carrots   
Large handful of coriander (if req)
3 cloves of garlic crushed   
½  tsp ground coriander seeds
1 tsp of ground cumin seeds   
2 tsp of mild chilli powder


1.   Heat saucepan, spray with olive oil ( or use water ), add the onion and carrots and cook until soft.
2.   Add garlic and still well for one minute, then stir through the spices and add the lentils and stock. Bring to the boil and simmer for 30 minutes or until lentils are soft
3.   Blend the soup, season to taste and add the coriander.
This makes four very large servings with a point’s value of half a point each.

That sounds very tasty Kevin, I shall give that a go. :D Even if I don't know what points are in relation to food......  :unsure: ...... so I probably won't worry about them!  :lol:

The points is based on the Weight watchers plan, so used to seeing and using points  I typed them in :)

It works if you stick to it though I lost 10 stone on weight watchers :)  This was me http://myweightloss-kev.blogspot.com/   But its not for everyone though
