storing root crops

hi I am fairly new to growing but have had a bumper harvest. Unfortunately my carrots and beetroot have gone rubbery within a few days of me lifting them to store. Does anyone know what I might have done wrong?

I don't lift to store, just let them sit in the ground overwinter.

You can store them in moist sand

Thanks to those who replied. Too late to save this years crops but I wil try both suggested methods next year hopefully with more success.
