Title: storing root crops

hi I am fairly new to growing but have had a bumper harvest.  Unfortunately my carrots and beetroot have gone rubbery within a few days of me lifting them to store.  Does anyone know what I might have done wrong?

I don't lift to store, just let them sit in the ground overwinter.

You can store them in moist sand :) :D

Thanks to those who replied.  Too late to save this years crops but I wil try both suggested methods next year hopefully with more success. :)
