My purple climbing beans, only planted out a couple of weeks ago, have reached the top of their 5 foot stakes.  What now?  Do I let them do there thing?  Or pinch out the top?

I'd pinch the tops out. All the energy then should go into bean production as opposed to growing in a tangled mess at the top.
