Anyone got any favourite recipe ideas, preferably wholemeal? Even slightly exotic like seeded or Granary etc.

Thanks.

I tend to use my bread machine as it`s so easy (had it 15 years) although I do use the chicken brick to bake it occasionally.
I use about one third brown or wholemeal to two thirds white. I add walnuts, sunflower seeds and some linseed seeds. Makes a lovely tasting loaf (especially when baked in the chicken brick) but you do need a bit of extra yeast to get it to rise.

We like this:

Bran and Yogurt  Bread

6 and 1/2 oz - 3/4 cup water
6 oz - 3/4 cup nat yogurt
1 and 1/2 tbsp oil
2 tbsp molasses or treacle
9 oz - 2 and 1/3 cups white flour
7 oz -1 and 3/4 cups wholemeal flour
1 and 1/2 oz - 1/2 cup wheat bran
1 and 1/2 tsp salt
1 tsp dried yeast

Follow your machine's instructions on adding in ingredients., basic setting.
And always can make buy hand, or just bake it in the oven, which usually comes out better.

I've only successfully baked bread this year, so I'm still keeping it nice and simple, with some white and some wholemeal (guessing, so long as total weighs 500 grams) and some seeds. A few good recipes will be tried and tested soon if posted  !

I do it all by hand, but maybe should look for a trusty machine that'll last as long as Jaycee's.

What is a chicken brick, Jaycee?

My favourite has to be oat bread.  It is a mixture of white flour and oatmeal.  Sometimes add sunflower, sesame and poppy seeds.  Has a fantastic taste to it.

My bread maker is in constant use, whether it is pizza dough, a loaf of bread, a cake or jam!  And waking up to the smell of bread is fantastic, makes you want breakfast straight away!
On the very steep learning curve of organic veg growing!!!!

Are you an 'Economy 7' overnight breadmaker (cooker, dishwasher, washingmachine user, etc.) like us?

I was up to 4:00 am in the morning last week pasteurising apple juice on cheap rate.

Unfortunately not, but evenings are so hectic that I never get around to doing the loaf until about 10 pm, so then I might as well have it nice and warm for breakfast the next day!

I have been known to wake up with a start at about 4 am realising I hadn't set the machine up to make a loaf of bread for the boys sandwiches the next day, so had to quickly go downstairs to make a rapid loaf of french bread!  Difficult to get back to sleep then though!

seriously easy.. take about 15 mins to make, time to rise and cook also. It is quaicker for me to make a loaf than it is to go and buy one...

If you get yourself a breadmaker it is easier than anything else you could make.  Basically put water, oil, sugar and salt into the tin, add flour and yeast, put it in the machine, press a couple of buttons, and three hours later you have a lovely loaf of homemade bread.

The thought of going back to supermarket bread horrifies me, and I would really miss the smell too.  Although my middle son thinks it is a real treat to have "white" bread by which he means shop bought bread!

The other great thing is that you know what has been put into it, and can choose your ingredients (ie organic over standard).  Definitely worth having a go.  Try freecycle for a breadmaker if you don't want to fork out lots of dough (parden the pun!)
