Bramble jelly
« on: August 05, 2011, 15:48 »
I have been gathering blackberries with a view to making bramble jelly. Some are in the freezer at the moment.
I believe that blackberries are low in pectin, so should I be using jam sugar with pectin added.
I have Val's book - but it seems to have been put into a safe place somewhere
so would be grateful for any help.

Thanks

Elaine

When straining through a jelly bag,   RESIST the temptation to squeeze the bag to get more juice out as your jelly will not be clear.  A crime to jelly makers!  ::)  Cheers,     Tony.

I just push it through a metal sieve,  to get the worst of the pips out, and call it Bramble & Apple jam.
The yield is higher that way, if you're feeling Frugal   :nowink:

Or make clear bramble jelly, then reserve the unpressed sludge to make a 'cheese' with a similar texture to marmelada/membrillo/quince cheese. I do this with my blackcurrents so that I don't waste any of them.
