Hi,

I realise that I am getting a bit ahead of myself here, and maybe being a little optimistic with my question, but I was wondering whether there is any preparation required to vegetables before freezing them. I am thinking particularly of the glut of french beans that I will undoubtedly be enjoying this summer :). Is it just a matter of washing, top and tailing and then throwing them in a bag and popping in the freezer? My wife mentions something about blanching first. Any help, gratefully received, guys. Thanks.

Different crops require different amounts of blanching time, some none

Many 'grow your own' books contan tables giving you the relevent information

Good luck with the growing


oh, missed a bit. French beans we top and tail and either freeze whole or sliced, having blanched them first for up to a couple of minutes dependant upon if they are sliced or whole.  We dont sow many and yet always end up freezing some

It was our first year last year and we grew loads.  We froze a few and didn't blanch them or anything and they were dekicious.  My better half has made runner bean chutney and it's delicious!!  ;)

I know some people don't blanch, but for long storage it is best to  :)

I started off blanching them but as the season progressed and I was bogged down with runners, I just prepared them and froze them.  Now we have eaten them all I can report that there didn't seem to be any difference in the taste/quality of blanched -v- unblanched.  Also made runner bean chutney which is yummy too.
