We tried to make black currant jam.. We looked at all the recipes and found that our boiled stuff didn't gel  boiled it again with 2 liquid packages of pectin  Still not much result.  Then we decided to use 4 tbsp of starch.  Turned out great and didn't change the taste.  Now at least we don't have to use it for ice cream sauce.

Just to update my original post, we now have 29 jars of blackcurrant jam all from 4 bushes producing approximately 7.5kg of blackcurrant. Next will be the gooseberry jam & raspberry jam.
