Title: Pineapple upside down cake recipe?

Hey,

Does anyone have a good recipe for pineapple upside down cake they wouldn't mind sharing?  My colleague has offered to bake one for us but she can't find her old recipe for it.  She says she's only found ones that contain cherries but doesn't think they are meant to be in there.

Can't she just omit the cherries? My 1970s recipe has glace cherries in it, but they are just for decoration to fill the holes in the pineapple rings.

Good reminder though, I haven't made one of these since then!  :lol:

Nearly all the recipes I have seen use a good old fashioned Victoria sponge mix.  :)

Thanks for the replies.  I know very little about the cake and have only had it once so your advice is helpful and appreciated.  I obviously thought it was more complicated than it actually is but can't wait to try it, yum!

made this tonight, inspired by this thread. OH is doing cartwheels of joy & I'm on a diet so can only have a taste.
Definitely leave out the cherries, they add nothing!  :)

Very nice! I used to make it lots as a child. I agree the cherries add nothing, but it wouldn't have the same nostalgic feeling without them!   :)
