How about Ginger or Peanuts? I have germinated a piece of ginger from a supermarket and its now into its third season. I have also managed to germinate Peanuts bought in their shells for eating. I planted them over the allotment and they did not really do anything but they did survive the season, You might not get much of a harvest but might win "Best in Show"!

We did try peanuts one year, we got two when we emptied the tub, I read they need around 80 ish consecutive sunshine days, we dont get that 
We also tried Okra, again it wasn't very good, maybe our climate is just far too hot for them

I grew Yacon last year, Didn't get much of a crop and the tubers were not as sweet as suggested. Tossed the remains.

I would go with aubergines in big pots and lots of basil

I have grown a pumpkin plant in the tunnel to see how much bigger I can get one to grow with the extra heat, but I'm not sure that would work with your container setup.

Not a pumpkin, but a squash: Butterbush, which can be grown in a pot.

Back to peppers this year 

We enjoyed a different fruit picking but this year back to peppers, Pusa Jwala, Prik Kee Noo, Padron  and Trinidad Perfume.

If you have various veggies or herbs that you've thought about growing, but haven't tried before, why not devote a small amount of space to several things? Sort of a test drive to see what you like.

In a greenhouse/polytunnel, I would be trying different salad crops in that space (might be different crops for you  though).

I’m on a pepper year this season as well. 

So far I have sown Trepadeira Werner, Alberto’s Locoto and Hungarian Peach Pepper as my hot ones.  I have no idea why the Hungarian ones are called peach as they are tiny red birds eye ones, but I got the seed from a Hungarian seed supplier and that is what they called them 

Instead of Trinidad Perfume, which Aidy and I both like, I have a new one - Havana Gold.  These allegedly also have full habanero flavour but are mild enough to eat raw.  I’ll let you know on that one

You wontet any for this year but what about pineapples? There was a lady on gardeners world (repeated) that grew pineapple just from bought pineapple tops & actually got pineapples eventually. Might be worth a try?

Up here in tropics pineapples, bannanas etc are the norm on the plots

Just sown some peas and broad beans to put in the raised no dig beds. I have tried before but they normally drown in the waterlogged ground but no problem now! The peas have to be in early or it is a waste of time they just frazzle in the sun any later than beginning June. Will be doing early brassicas as well .

Hello how about strawberries 8 in a grow bag or make a frame out of old ladders and put grow bags on the frame and have 2 layers  jezza

You could do what I do, save any potatoes that have rooted in the kitchen cupboard, then chuck them all in a container and you will be so surprised at the crop you will get.    Mrs Bouquet
