« on: May 03, 2009, 23:04 »
So some one gave me an almost impossible task of making cherry jam.... but I can not find Cherries anywhere!!

Can I make the jam from Glace Cherries?

I would have thought it would taste completely different - I can tell a glace cherry at 10 paces, I really don't like them.  Also, the sugar in the glace cherries would upset your regular recipe and may possibly interfere with the pectin i.e. setting level of the jam??

Have you looked in the frozen fruit section of the supermarket?
I try to take one day at a time, but sometimes several days all attack me at once...

That's what I thought (about the sugar) and yes, I checked, can find raspberries and mangoes, but no Cherries.

If you use certo or powdered pectin I think so. Cherries, at there best, are low in pectin except for Morello which just about has enough. The taste will be somewhat different. Alternatively, get some jam sugar (not preserving sugar) where the pectin has already been added. Use only about 40% sugar to the quantity of cherries.

I would give the someone who gave you the taskof jam making, the task of sourcing the cherries to make it. There's no way IMO that glace cherries are gonna make proper cherry jam, sorry it won't taste right  So they either find them for you, or they wait till they're in season :) Easy!
