Pickled eggs

Hi

Our chickens are laying  well and we cant keep up! Rather than give the excess away each week we thought we'd try and pickle some, Can anyone tell me how long they would last unopened and also opened?

The ones in Chip Shops etc are opened continually and an egg taken out. It's best to leave them for about 3 weeks before you open the jar to allow the vinegar to permeate. Make sure that they are at least 5 days old before you hard boil them or getting the shell off is a pain in the neck! I think that they'll be safe for at least 6 months.

Roll Roll made 2 jars of them last night(big jars).  I think 1 has gone to work with him as he couldn't wait ::)  So I don't think his will last long :lol:
