Title: Pickled Eggs

Hi,
I have an abundence of eggs at the moments as my 3 girls seem to be laying quicker that we can eat them and thought I might do some pickled eggs. Do these just get boiled for the usual 10 minutes and then placed in a sterilised jar of vineger (any particular sort?) and then left to do their thing? How long til they're pickled and how long do they keep?

I boil the eggs till their hard, drain and leave cool.

Boil one pint of distilled malt (white) vinegar.
De-shell the eggs and put into a sterilised jar, pour hot vinegar over cover and seal for a minimum of 6 weeks.

Think they keep for quite some time as long as they are not opened.

why seal for 6 weeks min?

Thanks for that I will pop out tomorrow to get the vinegar and give it a go. Don't like them myself but the OH will be pleased. Thanks again
