we have lots of eggs since getting four hens , what do you all do with all the eggs you get, we do not want to waste any so are wondering how we can make things to eat that will last/freeze.

You can separate the excess eggs and freeze in small batches ready to take out and use over winter. You can freeze lemon curd, but it needs using fairly quickly when you take it out. Great for adding to sweets or icecream, and yoghurt. The usual quiches. Errmm, that's my suggestions for now.

Make icecream, meringues, pancakes, Yorkshire puds and freeze them.
Also fruit mousses and sponge cakes.
Agree about the separating and freezing them.

You can dehydrate scrambles egg but I've not tried it myself.

Cakes freeze well, for those cold dark days when you need cheering up. :)

I successfully freeze egg whites (when using the yolk for Pastry etc) and make excellent meringues with them when defrosted, just remember to indicate how many are in each batch! I've never tried to freeze yolks but that's an idea!

I quite often make pasta dough with surplus eggs and feeze it in portion sized lumps. Lovely treat to be able to pull out of the freezer when you need a pasta moment ;)
If it defrosts and seems a bit sticky, lightly dust with flour before rolling it out and it is like you just made it :)

Sell them to friends for £1 for 6, and use the money for their feed/beddign etc (so in essence making everything free) or stick it away and treat yourself
You dont have to eat all the eggs for chickens to benefit your lives :)

I sell most of my surplass to friends (family normally get them for free!!), I keep forgetting to use it when buying my supplies though so I have about £40 stashed away!
No suggestions to add though...

I used to take mine to a local allotment site at the weekend - when plot holder likely to be about and ask would anyone like to barter them. Many allotment holders especially this time of year have gluts of something and you can swop ;) I was also given some holey cabbage leaves no good for humans but the chickens love them and make more tasty eggs.
