Prizewinning recipe

This recipe just won $250,000 from a nationwide contest in Canada. The recipe has also been posted and sounds absolutely yummy. The winner hails from the UK so not surprising it has lemon.


Luscious Lemon Pudding

250 ml (1 cup) granulated sugar
45 ml (3 tbsp) all-purpose flour
3 eggs, separated
50 ml (1/4 cup) unsalted butter, melted
15 ml (1 tbsp) finely grated lemon rind
125 ml (1/2 cup) fresh lemon juice
375 ml (1 1/2 cups) 2 per cent milk

Heat oven to 180 C (350 F). Butter a 2-l (8-inch)) square glass baking dish.

In a bowl, sift together sugar and flour; set aside.
In the bowl of a stand mixer fitted with the whisk attachment, place egg whites. Beat on high speed for 4 to 5 minutes or until stiff peaks form. Transfer whites to another bowl; set aside.
Place egg yolks in the stand mixer's empty bowl. Using whisk attachment beat on medium-high speed until yolks are thick and lightened in colour. Reduce speed to medium and add butter, lemon rind and juice; beat for 1 more minute. With machine running on medium speed, alternately beat in flour mixture and milk, making 5 additions of flour and 4 of milk.
Remove bowl from mixer. Fold in egg whites. Transfer to prepared baking dish.

Place dish in a large shallow roasting pan. Pour hot water into roasting pan until it is halfway up the side of baking dish.

Bake in centre of oven for 50 to 55 minutes. Let cool for 5 minutes. The top two-thirds will be cake consistency and bottom third will be pudding consistency.
Makes 9 servings.

I've made something very like that before and it is indeed delicious.  Got the recipe from Bill Granger, it's called Lemon Delicious pudding and it's very Australian.   ;)
Cheese makes everything better.

sounds similar to receipe I used to do when the lads were small.  Turns out with sponge on the top and a lemony custard/sauce underneath.

I lost the receipe many years ago so will certainly give this one a go.

Just got to make this now.  Lemon is probably my most favourite ingredient ever.  Though cheese is a close second. :blink:

The children used to call this Magic Pudding. This version sounds lush  :)

there is also a lemon delicious pudding in The Best of Mrs Beeton's British Cooking book (part of one of my birthday presents) which I am making for pudding today  :)

This lemon surprise pudding is in Delia's 1970's version of her complete cookery course.  We had it over Christmas.
I try to take one day at a time, but sometimes several days all attack me at once...

believe it or not i just made a lemon drizzle cake at the weekend im practicing cos hubbys work has a charity dat and would like some home made cake muffins ect and this cake had a lovly texture and took no time to make even the fussy grandson liked it .
your recipie sounds nice .

I have something similar done with apples. A toffee apple pudding. It separates into a sponge pud on the top and a fudgy appley sauce at the bottom. Have to make it with butter tho'. Heavens, can't believe I am still here on the computer at this time in the morning!!
