ive been making my own for years by hand anything you want to know just ask!  its worth looking at   http://www.sausagemaking.org/    realy good old fashioned service!  
 personally i use a hand crank mincer and sausage stuffing tube that goes on the end. cheap electric mincer/stuffers realy arent up to much and will die very easily,if you must use one spend as much as you can on one! ie over £100.00.
 its a grat hobby and opens up a whole new world! lamb and mint rabbit etc ille post a couple of recipes for you to try.

i got electric mincer/stuffer over here for 59 euros and works great , before that we just did it by hand.
love home made at least you know what went into them .
i agree about the site mentioned in previous post very helpful .

Got mine from Lakeland plastics which have now changed their name, but it is really good, spesh at barbie time coz they do top kebabs and stuff. Just had a quick look and they dont do them anymore.
