Whenever I tell someone about this recipe they immediately think it sounds boring.  Believe me, as a comitted carnivore it takes a lot for me to eat a veggie meal, but this is better than most meat based dishes.  I hope someone tries it and agrees.
Quantities are aproximate.
4 large floury potatoes
4 large carrots
2-4 leeks
2oz butter
three quarter pints of white sauce made from butter, flour, milk and salt and pepper , pouring consistency.( I always guess quantities, but if someone wants a recipe I can find one)  It's a basic bechamel sauce.
Loads of grated mature cheddar

Boil potatoes and carrots whole together in a saucepan until just cooked.  Meanwhile, fry the sliced leeks in butter until soft.  In a baking dish, layer the potatoes which have been sliced about 1-2cm thick and the carrots sliced about the same.  Season each layer.  Pour white sauce over.  Then place cooked leeks on top.  Finally, cover the top in a thick crust of grated cheese.  Bake on gas6 for about 45 minutes, or until the cheese is brown.  
I really hope someone likes it as much as me.
Cheese makes everything better.

Tonight I made broccoli and stilton soup - again unusually lacking in meat.
Just fry onions and celery gently, then add broccoli and water, then whizz up when soft. Then bung in a big lump of stilton and stir.
Scrumptious
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

Like the sound of that noshed.  In my very humble opinion, the best soups are vegetarian and very simple, nothing too complex, just good honest ingredients.
