I'm sure this has been asked before but I can't find it so.. can you freeze bread dough and if so at what stage? After first rise and knocking back seems sensible to me but not sure?

I think you will kill off the yeast at any stage of pre bake.  I would make enough and no more (although I freeze my home made loaves occasionally).

You can freeze yeast if you buy a block - so I don't see why not.

I find it more convenient to bake rolls til lightly coloured and freeze. They can defrost/finish baking in the oven - just like bought frozen garlic bread  ;)

Thanks. Doesn't sound too positive. The problem I have is that I can't get more than 1 bloomer in the oven at a time, and by the time loaf number 1 is cooked, then loaf no 2 has overproven and started to fall back on itself -.........Ah hah - lightbulb moment!  Why don't I put loaf no 2 in the fridge whilst no 1 is cooking? That'll slow it down and hold it till I'm ready to bake it - Yeah hooray  - why didn't I think of that before??

I freeze dough regularly to use for pizza bases. I do as you suggested and freeze after 'knocking back', although I have not made a loaf from the defrosted dough, I can assure you that it rises perfectly happily, it just takes a little longer. I often take it out the freezer in the morning, go to work and come back to dough just perfect for baking. Freezing does not kill the yeast, only makes it dormant. :) But as you suggest dough will keep perfectly happily in the fridge for a few days. :)

I freeze sometimes - it is fine. It just puts the yeast into hibernation :)

  The best way to freeze your dough ,is after you have moulded it to the shape of loaf you want .(Do not prove ).

 The yeast will not be killed ,but simply retarded .
 
 Take  you  frozen dough from  the freezer and allow  to rise , ( cover with a  plastic bag to prevent the dough   
 forming a skin  ,which would produce a dull coloured loaf )
 
 This will take several hours to prove up, at room temperature.
