More veggie help please

I have to cook dinner for 13 ( :ohmy:) on sunday. As one of my guests is a vegetarian I thought I might do a meat chilli and a vegetable chilli.
Does anyone know where I might find a good recipe, please. I used to have one but it is temporarily mislaid!

I make the same recipe, but use veggie mince (soya or Quorn) instead of the beef mince and a veggie stock cube as well if you need 1 :)

Good luck with that lot, at least as I'm doing a 'bitsies' lunch I can cook some stuff beforehand :)

Hi Elaine,

I have made veggie chilli a few times recently using soy mince and by recommendation from sunshineband :)  I have included mung beans into my recipe. These do a world of good for the texture which I found tended to be a bit soft and mushy without.

Thanks for your help both of you.
I am doing a chilli dish that has chicken pieces in, so that  may work with quorn pieces instead.
But I do like the idea of mung beans. Mmm, getting peckish now!

Mum I wanted to do a 'bitsies' lunch too but hubby thinks I should do proper food :mad:
Never mind that I will be at work on Saturday - and its HIS family! Bless them!

Well he is pretty nifty with a vacuum cleaner but I will keep him away from the chilli!!
He can only cook from a packet :tongue2:

Personally I think you can't go wrong with a few tins of chick peas, toms and some Pataks paste. Soften some onions and garlic first with some coriander and cumin. Very easy and lovely - cook for as long as possible.
Some veggies get a bit upset with lookalike meat bits.
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.
