Hi folks, been sooooo busy making jam nearly forgot to deal with bacon.   :unsure: Have a shoulder of bacon left in the fridge, dried it off 10 days ago  :wacko: can't bone and slice for bacon :nowink: so thought about boiling or roasting  :unsure:  Had it in brine etc. for 5 days prior to drying, not too salty.  Got a quick recipe please anyone?  My son has just arrived with his friend and I need to get moving  :) Many thanks  :)

Hope your all getting on top of a glut of fruit, veg. etc  :lol: :lol: :lol: :lol: 

P. S  I'm a newbie hope I posted this in the right thread  :lol:

Prob too late and not quick enough but just in case ... I'm sure you can adapt the second part re which veggies

3lb collar of bacon
1 small spud, peeled
1 small onion, stuck with a few cloves
1 bay leaf
6 black peppercorns
1/2 pt dry cider

1 small swede, cut into chunks
2 carrots, sliced
1 onion, sliced
3 sticks celery, chunks
2 oz butter
freshly-ground black pepper

Put joint into saucepan with first set of ingredients.  Top up with enough cold water to just cover bacon.  Cover and simmer for 45 mins.  Towards end of time, pre-heat oven to gas 4 / 180C / 350F.

Meanwhile fry all veggies in butter, arrange in bottom of casserole dish.
When bacon has had its 45 mins, remove from its liquid, cut off skin with sharp knife, place on top of veggies of casserole.  Pour in enough of cooking liquid to cover veggies.  Season with pepper.  Cover and cook further 45 mins.
I try to take one day at a time, but sometimes several days all attack me at once...
