anybody make sausages using the veggies or herbs from thier gardens ?
i have a load of rabbit and also going to have some pheasants to use up  i love vevison ones  but they cost me to much to have them made or i have top part with some of the meat.  so  any info  for making sausages or burgers even ?

Mince the meat up, add some bread crumbs and a beaten egg, plus whatever herbs and chopped up veg takes your fancy, press it all firmly into a loaf tin and bake it in the oven. Let it rest for a bit when you take it out and treat as sausage or burger by slicing it up. Ok you haven't got a sausage skin but it's still delish :)

Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

i want to cook with him ,,, just so i can wait till he swears at me and i beat the dodo out of him , he is a bully and kids are taught to not bully other kids and they let retards like him on tv to behave as he does .. and yes he does it in real life .

Not a vege sausage I'm afraid  ... but how about this one

Pheasant sausage
1lb boned, diced pheasant
1/2 llb open cap mushrooms (diced0
1/4llb butter (slightly less if meat ifs fatty)
2 rashers smoked streaky bacon chopped finely
1 small onion diced
2 teaspoons of chopped sage
1/2 teaspoon mustard powder.

Marianade the meat and mushrooms in just enough red wine to moisten them, mix all indredients together and mince (into sausage skins) or just in a loaf tin.  cook for approx 30 mins.

Yum yum :lol:

I've got a nice book called "Preserved" that explains how to make all sorts of sausages - from British bangers to salamis, but I've not tried it yet.  I did have a look around for the skins etc, and you can buy them on ebay.

The book also has a chapter on smoking (food, not fags!), so I'm going to try to rig up a cold smoker using my chiminea as the fire box.  Shouldn't be too hard - it's one of those cast iron ones with a tall chimney, so I figured I could just run some duct from that into a smoke box, but I'm sure it won't be that simple!  Anyone tried doing this?

yes tried that with mackeral tied a bit of wire around the gills and hung them down the chimney they cooked and smelt lovely but they fell of into the fire.
my brothers got a small smoker that runs of meths,you put your sawdust in close the lid with the fish in leave for a bit and hey presto its done
